Title: White Bean Dip with Fresh Ginger & Lime

Yield: 1 Batch
3 | c | Cooked white or navy beans OR- |
2 | cn | Drained rinsed beans |
1 | tb | Olive oil |
Zest and juice of 1 lime | ||
2 | Garlic cloves, peeled and minced | |
1 | 1" piece fresh ginger root, peeled and minced | |
2 | Green onions, minced | |
ds | Hot sauce | |
1/4 | ts | Salt |
3 | tb | Chopped cilantro |
In a blender or food processor, process the beans, olive oil, lime zest and juice, garlic, minced ginger, green onions, hot sauce and salt until smooth. Transfer to a medium bowl and add chopped cilantro. Serve either chilled or at room temperature.
Delicious with raw vegetables, crackers, or as a spread for crusty whole wheat bread.
