Title: Honey-Soy Steak Strips over Basmati

Yield: 2 Servings
1/2 | lb | Steak, 1/4" thick |
1 | md | Green pepper |
2 | c | White basmati rice, cooked |
MARINADE | ||
2 | tb | Soy sauce |
2 | tb | Honey |
1 | ts | Ground ginger |
1 | ts | Garlic powder |
1 | ts | Lemon juice |
1/4 | ts | Crushed hot red pepper flakes |
Combine the marinade ingredients, and the meat. Marinate in the fridge overnight.
Cut the pepper in thin strips and fry in a skillet over medium heat for about 2 minutes. Add the marinated steak, and stir-fry until meat is no longer pink. Add the marinade juices and 1 cup of water to the skillet and bring to a boil. Simmer until the liquid is reduced to about 1/3.
Arrange steak strips over the basmati, and drizzle the liquid from the frying pan on top.
Notes: The marinade from this recipe was based on that of a "Healthy Meals in Minutes" Steak Kebab recipe. The original had 146 calories and 4 grams of fat per serving.

I think I'm getting better at making up my own dishes. It was relatively easy, and quite good, too.
