Title: Fettucine with Tomato Basil Pesto

2 | c | Basil leaves, packed |
2 | Garlic cloves, chopped | |
2 | tb | Pine nuts |
1 1/2 | tb | Tomatoes, seeded & coarsely |
Chopped | ||
1/2 | c | EX virgin olive oil |
1/4 | c | Parmesan cheese |
Salt & freshly ground pepper | ||
1 | lb | Fettucine or linguine |
Combine basil, garlic, pine nuts and tomatoes in food processor. Process until chunky. Add olive oil and cheese and combine together. Season well. Boil fettucine in large pot of salted water. Drain and toss with pesto. Serve extra cheese separately.
