Title: Neptune's Salad

Yield: 4 Servings
2 | pk | (4-serving size each) JELL-O Brand Lemon Flavor Sugar- Free |
2 | c | Boiling water |
1 | c | Plain lowfat yogurt |
2 | tb | Chili sauce |
2 | tb | Finely chopped onion |
2 | tb | Lemon juice |
1 | c | Imitation crabmeat, flaked |
1/2 | c | Chopped celery |
1/4 | c | Chopped red pepper |
Completely dissolve gelatin in boiling water. Stir in yogurt, chili sauce, onion and lemon juice. Chill until slightly thickened. Stir in remaining ingredients. Spoon into 4 individual plastic containers (for brown bagging) or serving dishes. Chill until firm, about 2 hours. Makes 5 cups or 4 entree servings.
