Title: No Fat Banana Muffins
Categories: Banana Lowfat Muffins
Yield: 12 Servings

1 1/2 cFlour
1/4 cSugar
 2 ts Baking powder
1/2 ts Baking soda
1/2 ts salt -- optional
1/2 ts Cinnamon
 2Egg whites
 2 lg Bananas -- ripe, mashed
2/3 cSkim milk
1/3 cCorn Syrup

Spray 12 (2 1/2-inch) muffin cups with cooking spray. In medium bowl combine flour, sugar, baking powder, baking soda, salt and cinnamon. In large bowl, using a fork or wire whisk, beat egg whites lightly. Stir in mashed bananas, milk and corn syrup. Add flour mixture; stir until well blended. Spoon into prepared muffin cups. Bake in 400 deg. oven 22 to 25 minutes or until firm to touch. Cool in pan 5 minutes. Remove: cool on wire rack. Makes 12 muffins. Per serving: 0g fat, 0 mg cholesterol, 130 calories, 200 mg sodium (less if you omit salt)
