Title: No Fat Banana Muffins

1 | /4 c | Sugar |
2 t | s Baking powder | |
1 | /2 t | s Baking soda |
1 | /2 t | s salt -- optional |
1 | /2 t | s Cinnamon |
2 | Egg whites | |
2 l | g Bananas -- ripe, mashed | |
2 | /3 c | Skim milk |
1 | /3 c | Corn Syrup |
Spray 12 (2 1/2-inch) muffin cups with cooking spray. In medium bowl combine flour, sugar, baking powder, baking soda, salt and cinnamon. In large bowl, using a fork or wire whisk, beat egg whites lightly. Stir in mashed bananas, milk and corn syrup. Add flour mixture; stir until well blended. Spoon into prepared muffin cups. Bake in 400 deg. oven 22 to 25 minutes or until firm to touch. Cool in pan 5 minutes. Remove: cool on wire rack. Makes 12 muffins. Per serving: 0g fat, 0 mg cholesterol, 130 calories, 200 mg sodium (less if you omit salt)
