Title: Curried Split Pea Soup with Cauliflower

5 1/2 | c | Water |
3/4 | c | Dried yellow split peas; washed, drained |
1 | sm | Onion; chopped |
1 | sm | Carrot; cut in 1/4" dice |
1 | sm | Potato; cut in 1/2" cubes |
1 | sm | Rib celery; chopped |
1 | tb | To 2 tb ginger root; minced |
2 | ts | To 3 ts curry powder |
1/2 | ts | Salt |
1/2 | sm | Head cauliflower; cut into 1" pieces (about 3 cups) |
1/2 | c | Frozen green peas; optional |
In 3-qt. saucepan, combine water with split peas, onion, carrot, potato, celery, ginger root, curry powder, and salt. Bring to a boil over fairly high heat, turn heat to low and simmer, covered, 1 hr. Add cauliflower and cook 15 to 20 mins. longer, or until cauliflower is tender. Stir in green peas and serve.
