Title: Curried Split Pea Soup with Cauliflower

5 1/2cWater
3/4cDried yellow split peas; washed, drained
1smOnion; chopped
1smCarrot; cut in 1/4" dice
1smPotato; cut in 1/2" cubes
1smRib celery; chopped
1tbTo 2 tb ginger root; minced
2tsTo 3 ts curry powder
1/2tsSalt
1/2smHead cauliflower; cut into 1" pieces (about 3 cups)
1/2cFrozen green peas; optional

In 3-qt. saucepan, combine water with split peas, onion, carrot, potato, celery, ginger root, curry powder, and salt. Bring to a boil over fairly high heat, turn heat to low and simmer, covered, 1 hr. Add cauliflower and cook 15 to 20 mins. longer, or until cauliflower is tender. Stir in green peas and serve.
