Title: Braised Leeks & Green Beans

1/2 | c | Sherry |
1 | ts | Olive oil |
5 | c | Leeks, well washed |
1 | c | Wild mushrooms, sliced |
2 | c | Green beans, cut into - 1/3" lengths |
1 | ts | Orange juice |
1/2 | ts | Orange peel, grated |
1 | tb | Cider vinegar |
| | Salt & pepper |
In a large skillet, heat sherry & oil over medium high heat. Add leeks &
cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute
until the mushrooms begin to exude moisture, about 5 minutes. Stir in the
remaining ingredients & remove from heat. Serve warm.
