Title: Red Pepper Relish with Aromatics

Yield: 1 1/2 cups
1 | lb | Red bell peppers, stemmed, seeded, and thinly sliced |
1 | Lemon, ends trimmed, thinly sliced | |
1 | c | Each rice vinegar and water |
1 | c | Sugar |
Aromatic Spice Mix (recipe follows) |
Cut pepper slices into 1 to 1 1/2 inch lengths. Cut lemon slices into quarters, discarding seeds. In a 4 to 5 quart pan, combine peppers, lemon, vinegar, water, sugar and aromatic spice mix. Bring to a boil over high heat and boil rapidly, stirring often, until liquid is almost evaporated, about 20 minutes. Take care not to scorch. Serve warm or cold. If making ahead, let cool, cover airtight, and chill up to 1 week. Stir before serving.
Aromatic Spice Mix: Combine 1 tb mustard seed, 1 ts coriander seed, 1/4 ts fennel seed, 1/8 ts hulled cardamom seed, 1/8 ts ground nutmeg, and 4 whole cloves.
