Title: Fried Rice with Assorted Meat

8smBowls cooked rice, cold
1/2lbFrozen green peas, thawed
  And cooked
3 Eggs, beaten with a dash of
  Salt
1/4lbChicken meat cooked seasoned
  With salt and pepper
1/4lbBamboo shoots cooked & diced
1/4lbShrimp, shelled and cleaned
1/4lbHam or roast pork, diced
6 Dried mushrooms, soaked,
  Diced and cooked
1/4cWater or stock
2tbCooking wine
9tbOil
2 Eggs
  Salt and pepper to taste

Heat 2 T. oil in the wok, fry beaten eggs, break into small pieces, and transfer to a plate. Heat 2 T. oil and fry shrimp over high heat. Add chicken, ham, mushrooms and green peas. Set them aside. Heat the rest of the oil, add rice, and stir constantly over low heat. Add water or stock, 2 T. wine, salt to taste and soy sauce. Add all the ingredients and mix thoroughly. Serve hot.
