Title: Grilled Shrimp with Chipotle Mayonnaise

8 Bamboo skewers soaked in water
32 Shrimp (small-to-med-sized) peeled and deveined
1tbOlive oil
  Salt and pepper to taste
1/2 Recipe Chipotle Mayonnaise
1tbParsley, chopped

After preparing the shrimp (heads-on if you like), thread 4 shrimp pn each skewer about 1-inch apart, making sure the shrimp stay flat. Brush shrimp with black peppercorns and add salt and pepper to taste. Grill shrimp over a hot fire about 1 minute on each side. Serve topped with Chipotle Mayonnaise and chopped parsley.
