Title: Joojeh Anor (Chicken Stuffed with Pomegranate

2 | tb | Corn oil |
1 | (1-1/2 lbs) young chicken or Cornish game hen | |
1 | md | (1/2 c) onion, chopped |
3 | tb | Fresh pomegranate seeds |
3 | tb | Raw rice, cooked in water for 5 mins & drained |
1/2 | ts | Salt |
1/8 | ts | Pepper |
1 | tb | Lemon juice |
2 | tb | Water |
This is a Jewish recipe using fresh red seeds of pomegranate. The simple stuffing has a light fruity flavor.
1. Heat oil in a pan & brown chicken on a sides over moderate heat for 5 mins. Remove chicken.
2. In same pan, stir-fry onion for 3 mins, or until golden. Remove onion & mix it w/pomegranate seeds, rice, salt, & pepper, & use this to stuff chicken. It is not necessary to sew it up. Put chicken back into same pan, mix lemon juice w/water, & pour it around over chicken. Cover the pan & bake in a preheated 350 F oven for 45 mins. Baste now & then w/juices. Serve warm. Serves 4 w/other dishes.
