Title: Beef and Bean Pie with Guacamole

200 | g | Packet cheese-flavoured corn chips |
1/2 | c | (35g) stale breadcrumbs |
3/4 | c | (90g) grated tasty cheese |
1/4 | c | (20g) grated parmesan cheese |
2 | Eggs, lightly beaten | |
2 | tb | Chopped fresh coriander |
1 | c | (125g) grated tasty cheese, extra |
Paprika | ||
1/2 | c | (125ml) sour cream |
FILLING | ||
1 | tb | Vegetable oil |
1 | md | (150g) onion, sliced |
1 | Clove garlic, crushed | |
2 | ts | Ground cumin |
1 | ts | Sambal oelek |
500 | g | Minced beef |
425 | g | Can tomatoes |
1 | sm | (150g) red pepper, chopped |
1/4 | c | (60ml) tomato paste |
310 | g | Can red kidney beans, rinsed drained |
2 | tb | Chopped fresh coriander |
GUACAMOLE | ||
2 | md | (500g) avocados |
3 | Green shallots, chopped | |
2 | ts | Lemon juice |
Grease a 25cm pie dish. Process corn chips until finely crushed. Combine crushed chips with breadcrumbs, cheeses, eggs and coriander. Press mixture evenly over base and side of prepared dish. Bake in moderately hot oven about 10 mins or until lightly browned; cool.
Spoon filling into pastry case; top with extra cheese, sprinkle with paprika. Bake in moderate oven about 20 mins or until cheese is melted and pie is hot. Top with guacamole and sour cream. Sprinkle pie with chopped shallots, if desired.
Filling: Heat oil in pan, add onion and garlic, cook, stirring, until onion is soft. Add spices and mince, cook, stirring, until mixture is well browned. Add undrained crushed tomatoes, and remaining ingredients, simmer, uncovered, until mixture is thickened.
Guacamole: Mash avocados with a fork, stir in remaining ingredients.
