Title: Smoked Sausage Soup with Potatoes and Greens

1 | tb | Olive oil |
1 | lg | Onion, chopped |
1/2 | lb | Smoked kielbasa sausage, casing removed, thinly sliced, the |
5 | c | Water |
1 | cn | (19-oz.) Geat Northern beans, drained |
3/4 | lb | (2 medium) russet potatoes, peeled and cubed |
2 | c | Fresh spinach leaves, coarsely chopped |
1/2 | ts | Salt |
Freshly ground black pepper | ||
1 | tb | Red wine vinegar |
Heat oil in large heavy saucepan over medium-high heat. Add onion and cook 3 minutes or until it begins to brown. Add sausage and cook 3 minutes or until it begins to brown. Add water, kidney beans, and potatoes and bring to a boil. Reduce heat and simmer for 20 minutes or until potatoes are tender.
Just before serving, add spinach, salt, pepper, and vinegar. Pass the peppermill at the table.
