Title: Pasta Frittata with Ham

4 | oz | Angel hair pasta |

2 | c | Cooked pasta |
1 | c | Finely chopped onion |
1 | ts | Finely chopped garlic |
6 | sl | Low-fat deli-style baked ham, chopped |

4 | Egg whites | |
1/2 | c | Shredded part-skim mozzarella cheese |
1/4 | c | Grated Parmesan cheese |
2 | tb | Chopped parsley |
1 | ts | Italian seasoning |
1/4 | ts | Salt |
pn | Ground hot red pepper |
Heat oven to 450øF. Cook pasta according to package directions. Drain.
Meanwhile, coat large nonstick skillet with ovenproof handle with nonstick cooking spray. Add onion. Cook over medium heat for 5 minutes. Add garlic and cook for 1 minute. Add ham and cook for 1 minute. Set aside.
Lightly beat eggs, egg whites, mozzarella, Parmesan, parsley, Italian seasoning, salt and red pepper in medium-size bowl. Stir in drained pasta and ham mixture from skillet.
Recoat same skillet with nonstick spray. Pour egg mixture into skillet. Cook over medium heat for 3 minutes. Transfer skillet to oven.
Bake for 10 minutes or until top is set. Let stand for 5 mintues before cutting. Serve warm.
