Title: Pumpkin & Coconut Curry

Yield: 4 Servings
500 | g | Pumpkin, peeled and cubed |
1 | lg | Onion, finely sliced |
2 | ts | Chopped garlic |
1 | ts | Ground turmeric |
1 | ts | Chilli powder |
1 | ts | Salt |
1/2 | ts | Ground black pepper |
1 | ts | Dried shrimp paste |
2 | tb | Coconut cream |
1 1/2 | c | Hot water |
2 | Fresh green chillies, sliced |
Place all ingredients, except pumpkin, into a saucepan and bring to a boil. Lower heat and simmer for 5 minutes, Then add pumpkin, cover and simmer until tender. Serve with boiled rice.
