Title: Chicken Feet

  Chicken feet
  Oil for frying
  (pickled) black beans
  Red fermented bean curd
  Garlic
  Hot pepper

Put the chicken feet in a pot of boiling water for about 5 min. Then deep-fry the chicken feet first (it's called Jau (running) Yau (oil)) a little bit (how long? I haven't tried that, but I think it should be until the skin begins to swell). Then heat up the wok, add oil, (pickled) black beans, red fermented bean curd, garlic, stir fry a little bit, then put the chicken feet in, add hot pepper and some water, and put the cover over the wok and just cook. For how long, I imagine should be around 5-10 min. You can experiment on that.
