Title: Spicy Chicken Sate with Peanut Sauce

1 l | b chicken breast -- skinless, | |
: | boneless | |
2 T | B canola oil | |
3 | cloves garlic -- minced | |
1 t | s lime peel -- finely | |
: | shredded | |
2 T | B lime juice | |
1 T | B curry powder | |
1 t | s sugar | |
1 t | s soy sauce | |
3 | /4 t | s ground red pepper |
: | peanut sauce |
Soak 8 bamboo skewers in hot water 1-3 hours. Rinse chicken and pat dry. Cut lengthwise in strips. For marinade combine remaining ingredients, except peanut sauce, in a plastic bag. Add chicken. Seal bag and marinate in refrigerator 2 hours. Drain chicken, discarding marinade. Loosely thread chicken strips accordion-style onto skewers. Grill directly over medium hot coals 5-7 minutes or till chicken is tender and no longer pink. Serve with peanut sauce. Serves 4.
