Title: Balkan Grated Turnip Salad With Olive Oil And Walnuts

3 | md | Young turnips, peeled |
1 | tb | Extra-virgin olive oil |
Juice of 1/2 lemon | ||
Sea salt | ||
3 | tb | Walnut pieces |
1/2 | ts | Chopped parsley |
Coarsely grate the turnip; toss it with the olive oil, lemon juice and salt. Mound it onto a plate, then garnish with walnuts. Serve sprinkled with parsley. Serves 4.
PER SERVING: 85 calories, 2 g protein, 6 g carbohydrate, 7 g fat (1 g saturated)

The salad is very Bulgarian, but the olive oil is not -- friends from nearby Macedonia brought a bottle of the green-gold olive oil and drizzled it on.
