Title: Balkan Grated Turnip Salad With Olive Oil And Walnuts

3mdYoung turnips, peeled
1tbExtra-virgin olive oil
  Juice of 1/2 lemon
  Sea salt
3tbWalnut pieces
1/2tsChopped parsley

Coarsely grate the turnip; toss it with the olive oil, lemon juice and salt. Mound it onto a plate, then garnish with walnuts. Serve sprinkled with parsley. Serves 4.

PER SERVING: 85 calories, 2 g protein, 6 g carbohydrate, 7 g fat (1 g saturated)
