Title: Roast Duck with Apples

2 | ts | Salt |
1/4 | ts | Pepper |
2 | Garlic cloves, minced | |
3 | c | Apples, diced |
12 | Prunes, pitted, chopped | |
1 | Egg | |
4 | tb | Dry bread crumbs |
2 | tb | Brown sugar |
Be sure the duck has no feathers left on carcass. Wash, dry, and place the duck on its back. Make a paste of salt, pepper, and minced garlic. Rub this into skin and into the body cavity of the duck. Mix the apples, prunes, egg, bread crumbs, and sugar. Stuff the duck with this mixture and then close the opening withstainless stell skewers. Place on the rack of your roasting pan.
Roast in a pre-heated 400 degree oven for 20 minutes, at this point, reduce heat to 350 degrees and roast for 2-1/2 hours or until well browned and tender. Pour off fat as needed.
