2 | lb | Clams |
2 | tb | Salad oil |
1 | tb | Minced garlic |
2 | tb | Chinese salted black beans, |
Rinsed and chopped | ||
1/2 | c | Chicken broth |
1 | tb | Oyster sauce |
1 | tb | Sugar |
1/2 | ts | Soy sauce |
1/2 | ts | Sesame oil |
2 | tb | Cornstarch |
1/4 | c | Water |
1/2 | c | Chopped green onions |
Chinese parsley (cilantro) |
Wash clams; drain. In a wok or skillet, brown garlic in oil. Stir in black beans. Add clams and stir-fry 1 min. Add broth, oyster sauce, sugar, soy sauce, and sesame oil; cover and cook for 1 min. Combine cornstarch and water. When clams are open, thicken sauce with cornstarch mixture. Add green onions before serving. Garnish with Chinese parsley.
