Title: Asparagus with Curry Sauce - Sl 1/90

Yield: 4 Servings
1/2 | c | Mayonnaise or salad dressing |
2 | ts | To 3 tspn curry powder |
1 1/2 | ts | Lemon juice |
1 | lb | Fresh asparagus spears -OR- |
2 | 10-oz packages frozen asparagus spears; thawed | |
2 | tb | Capers |
Combine first 3 ingredients; cover and chill.
Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired. Cook asparagus, covered, in a small amount of boiling water 6 to 8 minutes or until crisp-tender; drain.
Arrange asparagus spears on a serving platter; top with curry sauce, and sprinkle with capers.
