Title: Potato Jackets with Sour Cream Dip

5 | lg | Potatoes, scrubbed |
150 | Ml/5 fl oz sour cream | |
1 | ts | Snipped, fresh chives |
Oil for frying |
Oven Temp. 200 C, 400 F, gas 6
Cooking Time 1 hour 30 minutes to 2 hours, depending on size of potatoes
Bake the potatoes until tender. Prepare the dip by mixing the cream and chives. Put in the fridge to chill. When the potatoes are ready, cut into four lengthways and scoop out most of the filling, leaving a thin layer next to the skin. Deep fry the skins a few at a time for approx. two minutes until crisp and brown. Drain on absorbent paper and keep in the oven until all the skins are cooked. Serve with chilled dip.
