Title: Grilled Salmon with Basil-Mustard Crust

Yield: 4 Servings

3tbDijon mustard
3tbBasil, minced
1/2tsOlive oil
1lbSkinless salmon fillet
  1" thick, cut in 2 pieces

Mix mustard, basil, and olive oil. Spread mixture heavily over both sides of fish. No flesh should be showing. Refrigerate until ready to cook.

Heat grill to very low. Spray surface with oil, place fillets on it. Cook for 5 min, turn and cook 5 min more. Some of the crust may fall off. Or you could broil the salmon.

Remove from heat. Loosely cover with foil and let stand for 5 min. Cut to make 4 pieces and serve.
