Title: Salmon with Parsley Pesto

4 Fish, salmon steaks 150/200g
1lgParsley, bunch of...
2tbNuts, pinenuts
1 Garlic clove
2tbJuice, lemon
2tbOil, olive

TO MAKE PESTO:

Discard coarse stems from parsley. Place parsley, pine nuts and garlic into blender or food processor and chop finely. Add lemon juice and olive oil, blending until thick.

Cover grill or babecue with a piece of oiled foil. Grill salmon steaks for no more than two minutes on each side.

Serve topped with a dollop of parsley pesto.

Delicious with microwaved new potatoes tossed with strips of red capsicum, and a green salad.
