Title: Date Nut Cake with Glaze

1 | lb | Dates |
1 | lb | Pecan halves |
1 | lb | Candied cherries |
4 | Eggs | |
1 | c | Sugar |
1 | c | Flour |
2 | ts | Baking powder |
2 | ts | Vanilla |
1/4 | ts | ;vanilla |
GLAZE | ||
1/2 | c | Light corn syrup |
1/4 | c | ;water |
Mix together fruit and nuts in large bowl (leave whole, do not chop up). In separate bowl mix all other ingredients. Add to fruit and nuts and dredge real good. Grease baking pans and *pile* the dough in but don't pack or press down. Bake in slow oven (300ø) about 1 hour. Turn pans upside down to cool. loosen from sides of pan a little and if cake sticks to pan, just pat the cake back in shape and it will hold. (No shortening in this cake)
GLAZE: Mix well and cook over low heat until it comes to a rolling boil. Spread on cake with pastry brush. (Be sure cake is cool.) This glaze will harden and make the cake shiny. It helps to keep it moist inside.
