Title: Grilled Fruit with Raspberry Sauce

RASPBERRY SAUCE | ||
1 | c | Non-fat sour cream |
1/4 | c | Mayonnaise |
1/4 | c | Raspberries |
3 | tb | Chambord liqueur |
FRUIT | ||
1 | Small cantaloupe, peeled, seeded, sliced | |
1 | Pear, cored, sliced | |
1 | Banana, sliced lengthwise, cut into quarters | |
2 | Plums, pitted, sliced | |
1 | Apple, cored, sliced | |
Butter-flavored cooking spray |
In a small bowl, mix together the sauce ingredients. Set aside in the refrigerator. Spray grill rack and place fruit on the grid over medium hot heat. Coat fruit lightly with cooking spray. Grill fruit on a rack for a few minutes only, turning it once or twice as it heats. Fruit should be hot and soft, but not mushy. Use a long-handled spatula to transfer fruit to individual plates. Drizzle sauce over fruit and serve.
