Title: Salad Nicoise

Yield: 4 Servings
1/3 | lb | Green beans |
1/3 | lb | Baby potatoes |
56 | G. can rolled fillets of anchovies, drained and rinsed | |
1/3 | c | Black olives, halved |
12 | Cherry tomatoes, halved | |
6 | Lettuce leaves | |
2 | cn | Chunky tuna, drained |
French Dressing: | ||
1/4 | c | Olive oil |
1 1/2 | tb | Lemon juice |
1 | ts | White vinegar |
1 | ts | Seasoned pepper |
1 | ts | Chopped fresh thyme leaves |
Cut beans into 1 1/2 inch lengths. Boil, steam or microwave beans and potatoes separately, until just tender; drain.
Slice potatoes, combine in a bowl with beans, anchovies, olives,tomatoes, torn lettuce leaves and tuna.
Just before serving, toss lightly with dressing.
Dressing: Combine all ingredients in jar, shake well.
