1 | lb | Plain flour |
4 | oz | Butter |
2 | oz | Caster sugar |
1 1/2 | ts | Baking powder |
pn | Salt | |
2 | tb | Honey |
2 | Egg yolks | |
1 | Egg white | |
10 | oz | Milk |
TOPPING | ||
8 | oz | Heather honey |
2 | tb | Almonds; ground |
Rub the butter into the flour. Over low heat, dissolve the sugar into the honey and add the baking powder. Whisk the egg yolks and blend them with the milk.
To the flour mixture add a little of the honey mixture alternately with the egg mixture and combine thoroughly, continuing until the ingredients are mixed well, adding the salt finally.
Roll the paste lightly, on a floured board and cut into rounds or shapes. Bake for about 20 minutes at 350øF / 180øC / gas mark 4.
Put the cakes on to a wire rack, brush with the egg white and spoon over a little of the topping mixture.
