Title: Cucumber-Yogurt Soup

2 | c | Unflavored low-fat yogurt |
1 | md | Cucumber, peeled and chopped |
1 | c | Chicken broth |
2 | tb | Each lemon juice and orange juice |
3 | ts | Fresh oregano leaves |
Salt and pepper | ||
Fresh oregano sprigs |
In a bowl, stir together yogurt, cucumber, broth, lemon and orange juice and minced oregano. Add salt and pepper to taste. Chill at least 1 hour or up until the next day. Garnish each serving with an oregano sprig.
