4 | c | GRANULATED SUGAR |
2 | c | LIGHT CREAM OR HALF & HALF |
1 | tb | LIGHT CORN SYRUP |
FLAVOURING |
Mix sugar, cream and corn syrup in a large heavy pan. Bring to a boil and cook till the soft ball stage (235 degrees F,)
Set pan in cold water in your sink.
add flavouring of your choice (vanilla, lemon,orange, cinnamon etc) Beat rapidly with a wooden spoon, scraping mixture from side of bowl when it gets stiff- when candy gets thick but before it stiffens - turn into a buttered pan.Cool and cut into squares when hard makes about 2lbs of candy.
