Title: Twice-Baked Potatoes

1 | tb | Olive oil |
FILLING | ||
3/4 | c | Chopped cooked chicken |
2/3 | c | Natural yogurt |
1 | Banana, sliced | |
1 | Peach, halved, pittied and chopped | |
1 | tb | Snipped fresh chives |
1/4 | c | Grated Colby cheese |
Preheat the oven to 400øF. Prick the potatoes, and place in a roasting pan. Sprinkle the salt over, and pour the oil over. Bake for 1 hour, or until cooked through.
Remove the potatoes from the oven, and cut in half lengthwise. Scoop out the centers, and put the potato in a bowl. Add the chicken, yogurt, banana, peaches and chives to the potato, and mix together. Spoon into the potato cases, then top with the cheese. Return to the oven for 10 minutes. Serve.
