Title: Broccoli-Cheese Strata

2 | c | Broccoli flowerets |
1/2 | c | Red bell pepper, chopped |
3/4 | c | Onion, chopped |
6 | sl | Whole wheat bread, cubed |
4 | oz | Low-fat Monterey Jack cheese shredded |
12 | oz | Tofu, drained and cubed |
2 | c | Skim milk |
2 | Eggs (or equilalent egg substitute) | |
1/8 | ts | Ground red pepper |
Cook broccoli and onion in covered saucepan until crisp-tender. Drain. Arrange bread cubes, bell pepper and broccoli mixture in the bottom of an 8" square baking dish. Sprinkle with cheese. Blend tofu, skim milk, eggs and ground red pepper in blender until smooth. Pour over bread-broccoli mixture. Cover and chill for several hours or overnight. Bake uncovered at 325øF fir 50 to 55 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
